Demand for dietary quality in Russia

Because the prevalence of diet-related chronic diseases continues to increase steadily in the Russian Federation, this study aims to analyze the Russian demand for dietary quality. In a first step, the concept of diet quality is operationalized by a dietary quality index considering various nutritional aspects of Russians’ diets. In a second step, to deduce the relevant determinants of a more healthy diet, Grossman’s health investment model is enhanced by including important aspects of dietary quality. By applying this enhanced theoretical model, demand functions for several aspects of dietary quality are derived and empirically tested using data from the Russian Longitudinal Monitoring Survey of HSE. In the empirical analysis, this research group investigates whether Russians’ diet quality changed during the Russian transition process. Furthermore, IAMO researchers identify the relevant determinants of the Russian demand for a healthy diet. Based on these empirical results, policy recommendations targeting diet-related health problems will be derived.
